Let’s talk about an experience that was not only visually stunning but also rooted in flavor, intention, and thoughtful hospitality.
As part of the Eat for Impact initiative, I had the chance to enjoy a plant-based dinner at Mexta, and from the moment I walked in, it felt like something special. The ambiance is warm, earthy, and elegant — from the natural textures to the golden lighting and custom design work, every inch of the space was curated with care. This is the kind of place that’s made for date nights, special occasions, or just treating yourself to something memorable.
I tried two of the featured plant-based dishes:
- Crispy Cauliflower Tacos – Tempura battered cauliflower florets, pico de gallo, red cabbage slaw, avocado crema, and salsa macha.
- Mole Piquillos – Roasted piquillo peppers stuffed with huitlacoche and cremini mushrooms, topped with Oaxacan mole negro, sesame seeds, and charred leek dust.
Both were beautifully plated and full of flavor, proving that meatless meals can still be rich, bold, and satisfying. The tacos had an amazing crunch paired with creamy slaw and crema, and the mole had this depth that you only get from traditional, slow-prepared sauces.
What made the experience even better was the staff. Everyone was incredibly kind and knowledgeable, but a special shoutout goes to our server, Andres, who made the evening feel effortless and fun. He was super attentive and took the time to ask the chef some questions I had about how the cauliflower was prepped — because yes, it was that good. That level of thoughtfulness makes all the difference and truly elevated the entire experience.
This visit was a great reminder of what Eat for Impact is all about. The initiative, created by Planted Society in partnership with the City of Austin’s Office of Climate Action and Resilience, highlights plant-rich dishes at locally owned restaurants throughout the city. It’s about making climate-conscious dining more accessible, and showcasing how easy it can be to enjoy a meal that’s better for the planet without compromising on taste or experience.
